Carrot Cake Cookies

Hiya!  I hope you had a great week!  I adapted these cookies so that they're very lightly sweetened and perfect for breakfast of snacks- and they're chalked full of fiber, healthy fats, fruit, and even veggies! 

 
Carrot Cake Cookies:
Vegan, Soy Free

  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 3/4 cup ground flax
  • 2 tsp cinnamon
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup golden raisins
  • 1/2 walnuts, chopped
  • 1 carrot. shredded (-1 cup)
  • 3 Tbsp coconut oil, melted
  • 1/4 cup maple syrup
  • 1 banana, mashed
  • 1 tsp pure vanilla extract
  • 1 tsp ground ginger
  • 1/4 cup almond milk
  • 2 Tbsp orange juice/ 1/4 orange
 
Directions:  Preheat the oven to 375.  Mix the flour, oats, flax, cinnamon, baking powder, salt, and golden raisins.  Pour the walnuts into a small bowl and microwave them from 1-2 minutes to give them an extra toasted, crunchy taste and add them to your other dry ingredients.  Melt coconut oil and add your shredded carrot, maple syrup, mached banana, vanilla, and ginger.  Add to dry ingredients and mix.  At this point, if your dough is to dry to form cookies, add almond milk (one tablespoon at a time) until you reach desired consistency.  Then spoon cookies onto a baking sheet lined with parchment paper and squeeze orange juice over them.  Bake for 14-16 minutes.  Let cool (I have problems at this stage).  Makes:  13-17 cookies.

3.  Add wet to dry and mix, adding almond milk as needed:
 
 
4.  Plop onto a baking sheet, add orange juice, and bake for 15 minutes at 375:
 
 
These cookies are fantastic!  They fill you up and are so good for you! 
 
 
They also photograph quite well.

I froze half of the batch of cookies, so we'll see how those will defrost when that time comes.  We've already eaten through all the ones that we're left out!  They have a really nice baked banana flavor.  I love the crunchy walnuts and chewy flax in these cookies.  
 
 
They're also perfect for crumbling over oatmeal and packing in lunches for dessert.
